Sorry I didn’t post last week, it ended up being a total hodge-podge of meals; exactly what I aim to avoid by meal planning. I guess that’s what happens when you grocery shop on your phone, in the car on the way back from the airport at 10 o’clock at night the day after Thanksgiving.
This week Matt is on his last week-long international trip of the year. It’s always interesting when he’s gone and my mom is here to help. On the one hand, I can make whatever I want but at the same time, its hard to not just eat junky toddler meals. I’m fortunate that for the most part, my kids will eat whatever I put on the table for them, at least some variation of it.
Monday ~ tuna shells, green beans, rice
Tuesday ~ Butternut squash soup, grilled ham and cheese sandwiches
Wednesday ~ Turkey Chili
Thursday ~ Crock-pot honey chicken, quinoa, broccoli
Friday ~ turkey meatballs (from the freezer), spaghetti
Saturday ~ Matt and I are going out!
Sunday ~ TBD
What are you eating this week? How do you keep it healthy and easy when it’s so cold out that all you want is comfort food casseroles?
