Meal Planning for the New Year

While we Jamie has been recovering nicely from his surgery last week, neither Matt nor I anticipated how tiring and stressful the whole process would be on us.  Add to that a teething baby, my trying to squeeze in a few hours of work and some additional stress busting workouts and suddenly it’s already Thursday and I’m just now meal planning for the week, oops.   At least I’ve collected lots of inspiration and new ideas from pinterest; hopefully it’s as tasty as the pictures make it all seem.

With two little ones we’ll be spending New Year’s Eve at home.  Normally, we have a bunch of family friends over and do a kid friendly East Coast NYE but with Jamie still on the mend and my mother in-law and sister in-law in town, we’ll be keeping it extra low key. My sister in-law loves to cook as much as I do so we’re going to have some fun making us a fancy, intimate dinner at home while my MIL and Matt are on kiddo duty.

Thursday  - pan fried chicken, mashed potatoes, broccoli or spinach

Friday - Slow Cooker Kansas City Sue's Chicken, rice, green beans

Saturday (New Year’s Eve) – blue cheese crusted filet mignon, Smitten Kitchen’s simple potato gratin, oven roasted Brussels sprouts, individual chocolate soufflés (super simple yet impressive)

Sunday – Matt and I are going on a date!!!!

Monday – My baby girl turns 1! We’re having family over for a little lunch party so we’ll probably go out for a celebratory dinner.

Tuesday – Red wine braised short ribs, polenta, oven roasted veggies

Wednesday – Dinner a Love Story’s split pea soup

Thursday – Mexican Albondigas

Friday – Slow Cooker Irish Beef Stew
